Beef & Pumpkin Porridge Print E-mail

For this porridge, I specifically  mention beef because it is better to use beef for the overall flavour.  You can use other meat but the effect will not be the same.  The quantity for pumpkin is just a rough approximation.  You can add whatever amount you fancy.


Ingredients

1½ cups   stock

½ cup      rice

½            onion, finely chopped                        

2-4 tbsp   minced beef

1tbsp       frozen peas (thawed)

5-6pcs     pumpkin of  about 1" cube size


Steps

  1. Stir fry onions in a little oil for about 5 minutes.  Add peas and minced beef and  fry a while longer.
  2. Cook stir-fried onion/pea/beef and the rice and pumpkin together in stock until rice is cooked to porridge-state, and pumpkin is soft.
  3. Using a fork, mash the pumpkin and stir porridge thoroughly.
