Mashed Potato 3

This is great for young babies who have just started eating and there is not much variety open for them yet. Remember, introduce one food at a time. This means in the beginning, there are only that few food that your baby can eat, so it may seem a bit boring. After all, mashed potato is mashed potato. Unless your baby has already been introduced to a lot of other food which can be added into the mashed potato, it is going to be boring, not to eat, but for us to cook!

This recipe adds a twist to your boring mashed potato. It is also very quick and easy to make. The smell of the toasted garlic in the mashed potato is heavenly! You can even adapt this into your normal adult-version mashed potato.

Ingredients

Potato

Chopped garlic. (chopped, not minced!)

Olive Oil

Expressed breastmilk or formula milk

Steps

Cook the cleaned potato with skin in a pot of water. When the potato is ready, you should be able to poke through easily with a fork.

While the potato is cooking, drizzle a little olive oil on the chopped garlic and toast in an oven toaster. Keep an eye on it. Once the garlic starts browning, take it out! It will burn very quickly and becomes bitter. The garlic will continue to cook and brown in its residual heat even when you have taken it out of the toaster.

Take the potato out of the pot, dunk into cold/tap water. Start peeling the skin away. If you are not using breastmilk or formula milk, and your baby has not been introduced to dairy yet, you may want to reserve some of the hot water to mash the potato with.

Mash potato as per how you normally do, adding breastmilk/formula or water as necessary.

Finally, throw in the toasted garlic and oil and mix.
